If you have an Insta pot this will make your life so much easier. Start by adding 1 1/2 cups of rice to your Insta pot and 1 1/4 cup water. Close the lid. Hit the rice button. Let it go.
Begin by sautéing (in your pot you plan on using to make the soup) chopped onion. Throw in chopped cloves of garlic. Next diced celery. Sauté for approximately 10 minutes.
Take out of pot, put aside in a bowl.
Next, in the same pot you will make roux (don’t get scared it’s just equal parts of flour and butter). One stick of butter equal to 8 tablespoons melt. When butter is completely melted, slowly add half cup of flour. Low heat, it will burn easily. You just made roux!
To the roux mix, add three containers of organic chicken broth. Then, Add 4 cups of water. Bring to boil.
Add as many carrots as you would like (I cut my baby carrots in half). Add the sautéed onion and celery mix. Add one can of Canelli beans. Beat in two eggs. Add 16 ounces of chopped spinach.
And finally after your rice has cooked in the Insta pot you will now add your rice to the soup.
Add your seasonings turmeric, Pepper, and salt to taste
Allow to simmer for 10 minutes and your healthy dinner in a bowl is served.
As my drink of choice, coconut water. For dessert a Kind Bar! This satisfied my need for a chocolate dessert and it was a much healthier option!

3-Organic chicken broth
4 cups of water
1-small bag of carrots
one can of Canelli beans
one bag of fresh spinach
Salt to taste
Pepper to taste
